Q. Do you use wild or farmed salmon in your Canadian Select salmon products?
We only use wild salmon in all our salmon products. Our salmon is caught in the ocean (not rivers) when the skin colour and flesh firmness is at its peak. (In fact, the aquaculture industry—fish farming—does not produce pink or sockeye salmon. Most farmed salmon is Atlantic salmon.)
Q. So your smoked salmon doesn't need to be refrigerated? How's that?
Our processing and packaging methods mean that your smoked salmon will stay fresh and good to eat for quite some time without refrigeration. After the salmon is filleted and smoked, it is portioned and placed into a special foil pouch, vacuum sealed and then 'cooked' in a giant pressure cooker (in much the same way canned fruits and vegetables are processed). Q. How long will my smoked salmon product last?
Kept in its (unopened) sealed foil pouch, your smoked salmon will last for 5 years from the time of purchase. (We turn our inventory over every 3 months at Canadian Select Enterprises.)
Q. Do you use hot or cold smoke in processing your salmon?
Canadian Select salmon is cold processed at 78 degrees F over hardwood smoke (80% cherry wood).
Q. Do you put any other preservatives in your smoked salmon?
Q. How long will the smoked salmon keep once I've opened it?
If you have any left over, wrap tightly in plastic wrap. It will keep in the refrigerator for 5 to 7 days.
Q. I'd like to buy one or two of your smoked salmon gift items—how do I do that?
